Autumn Bliss

I wanted to start off my first official entry with something unique and something special.
This evening I was gifted with just that! Take a look at my daughter's little creation. She said, ' Its for yours mummy, for yours!' So thoughtful.

I am so in love with this season! Autumn in Auckland, is the best time of the year! The abundance of feijoa and now our beetroot and broccoli is coming up wonderfully! I am hoping to get some full, rich food colour from our beets crop this year. Perfect to add to my organic food colour range, and equally great to use in my beetroot brownies!
To this post am showing you what I've been up to since my last entry and further photographs of my 6 cupcake entries from the Maungawhau Playcentre's Cupcake Cookoff last month.
A few of us went out to dinner last night to celebrate my cousin's birthday. I made a cake in two and half hours. Baked, cooled and dressed just in time as an added treat to our evening. Some pics of our little outing... and a great little spot we found that was serving my lil one's favourite food. Chippies!

To everyone, I hope you are easing into our Autumn with lots of belly warming wonders. Be it roasts, casseroles or hot chippies!

Time to share care bear :) Feijoa Cake

I tried this great recipe on Thursday.. I found it while searching the web for a scrumilicous Feijoa Cake Recipe. I've modified it slightly in some places. Give it a go. Im telling you, it will come out perfect on first go! I made these into cupcakes...

Feijoa Cake

100g butter (I always use unsalted butter)
3/4 cup sugar
2 eggs
3-4 large ripe feijoas  ( I used 6 )
1 tsp baking soda
2 Tbsp boiling milk (or boiling water) me- full fat milk! :)
1 1/2 cups flour
2 tsp baking powder

Preheat oven to 180 degrees cel.

 Cream butter and sugar. Add eggs one at a time and beat well.  

Peel and mash feijoas and combine well. 


Dissolve baking soda in hot milk then add to the mix.

Place in a greased cake pan (or double lined cupcake cases)
Bake for 30-40 minutess (15-20 minutess for cupcakes)


Makes 16-20 cupcakes.
